Ulrick & Short has relaunched its range of fat replacers as a one-stop solution for manufacturers of sweet and savoury foods. The range of Delyte fat reducers and replacers can be used as substitute ingredients for the majority of fats including butter, oil and milk solids. The British-owned starch specialist claims it also enhances the formulation with more body and texture as well as reducing the fat and calorie content. Delyte can be used in cakes, ganache, fillings and icings, as well as both sweet and savoury sauces, from bechamel to caramel. The range can replace up to 50% of butter in cakes and its 30% of the oil in muffins while the fat in processed creams such as confectionery and bakery fillings can be reduced by up to 33%.
