These are tough times for many small wineries and the message is clear: differentiate or die. Parish Hill Wines, in the Adelaide Hills, created its point of difference even before a vine was planted. When owners Andrew Cottell and Joy Carlisle sat down six years ago to work out which varieties to plant in their new vineyard, they could see the futility of competing with the 'big boys' with all the popular varieties, so they decided to do something different. They took a gamble with Italian varieties Nebbiolo and Arneis, as well as some Pinot Noir, and today all three wines sell for $25 a bottle and enjoy a loyal following. Andrew and Joy also planted some Chardonnay, the grapes of which are normally sold to other wineries to provide cashflow to help ran the business, although this year they kept a small amount to produce a Parish Hill Chardonnay.
