Amongst my fellow wine scribes, it is Max Allen who is one of the most sensible in his views; although he can be a tad irrational on the subject of biodynamic wines and GMOs. However, I must take issue with him on the matter of the correct serving temperature of wine. In his column in a recent Weekend Australian, Max endorsed the opinion of a certain winemaker that "...wines are best drunk at the mean January temperature of the region that they come from". For a start, I assume that he must have been referring to the wines of the Southern Hemisphere, because to apply this rule to the Northern Hemisphere would see us drinking Burgundies and the like at close to zero.
