食品供应链管理、可追溯性与食品安全管理绩效

摘要

This study proposes the theoretical model of relationship among food supply chain management,traceability and food safety management performance based on the 1200 food manufacturing enterprises in China.The result through a structural equation model shows that the food supply chain management has no significant direct effect on the food safety management performance,while it has an indirect effect on food safety through food traceability system.According to the result of the empirical study,some management suggestions are concluded.%本文通过构建食品供应链管理、食品可追溯性体系建设和食品安全管理绩效关系的理论模型，以中国1200家食品加工制造企业为调查对象，并使用结构方程模型进行实证检验，从而得出结论：食品供应链管理对食品安全管理绩效的直接影响并不显著，而是通过食品可追溯性体系建设来影响食品安全管理绩效。研究结论对于食品安全管理具有重要的信息指导意义。
