采用生化分析的方法,对长江口斑尾刺虾虎鱼(Acanthogobius ommaturus)和纹缟虾虎鱼(Tridentiger trigonocephalus)的肌肉营养成分进行了分析,并对两者的营养品质进行了比较.结果表明:斑尾刺虾虎鱼的水分含量显著高于纹缟虾虎鱼(P<0.05),而粗蛋白、粗脂肪和粗灰分含量显著低于纹缟虾虎鱼(P<0.05).斑尾刺虾虎鱼和纹缟虾虎鱼的氨基酸组成一致,均检测到18种氨基酸,必需氨基酸指数(EAAI)分别为66.56和73.00.脂肪酸中二十碳五烯酸(EPA)与二十二碳六烯酸(DHA)的总量斑尾刺虾虎鱼显著高于纹缟虾虎鱼(P<0.05),分别为32.14%±1.16%和30.17%±1.02%.从以上分析可见,两种虾虎鱼均含有丰富的各种营养成分,但从粗蛋白、粗脂肪、必需氨基酸含量来看,纹缟虾虎鱼的营养价值优于斑尾刺虾虎鱼;从EPA和DHA的相对含量来看,多不饱和脂肪酸营养价值斑尾刺虾虎鱼高于纹缟虾虎鱼.%This paper briefly compared the nutritive components and nutritional quality of Acanthogobius ommaturus and Tridentiger trigonocephalus collected from the Yangtze Estuary. Results showed that the moisture content of A. Ommaturus was significantly higher than that of T. Trigonocephalus ( P < 0. 05 ) , while crude protein, crude fat and crude ash content of A. Ommaturus were significantly lower than those of T. Trigonocephalus ( P < 0.05). 18 kinds of amino acids were found in both species, 8 kinds of essential amino acids (Thr, Val, Met, Phe, Ile, Leu, Lys and Trp) , 2 kinds of half-essential amino acids (Tyr and Cys ) and 8 kinds of nonessential amino acids (His, Arg, Asp, Glu, Ser, Gly, Ala and Pro). The essential amino acids index (EAAI) was 66. 56 and 73.00 for A. Ommaturus and T. Trigonocephalus, respectively. Among fatty acids, the proportion of EPA + DHA was 32. 14% ± 1.16% and 30.17% ± 1. 02% for A. Ommaturus and T. Trigonocephalus, respectively. The proportion of EPA + DHA and ( 3PUFA in A. Ommaturus were both significantly higher than those in T. Trigonocephalus. The present study indicated that the nutritive components of both species were mainly similar. Both species contained abundance of amino acids and fatty acids. Comparing the content of crude protein, crude fat and essential amino acid, it may infer that these nutritive components in T. Trigonocephalus were higher than that in A. Ommaturus. Correspondingly, comparing the content of EPA + DHA and w3PUFA, it may infer that the nutritive components of these important PUFA in A. Ommaturus were higher than that in T. Trigonocephalus.
