放养柴鸡蛋的识别与质量控制

         

摘要

The author discusses the factors that affect the quality of eggshell from the color, texture, shape and cleanliness. Discussed the factors that affect the quality of albumen from the stickiness, color and meat spot. Discussed the factors that affect the quality of yolk from color, stickiness, blood cake, dead embryo and Sticky shell. Discussed factors that affect the quality of egg transport and storage from air chamber size and position. The author proposed a method to evaluate the quality of eggs according to the four aspects of appearance which in order to provide the basis for consumers to buy eggs.%作者从蛋壳颜色、质地、形状和洁净度探讨了影响蛋壳质量的因素,从蛋白黏稠度、颜色和肉斑形成等方面探讨了影响蛋白质量的因素,从蛋黄颜色、黏稠度、血斑与死亡胚胎和粘壳情况探讨了影响蛋黄质量的因素,从气室大小和位置探讨了影响鸡蛋运输与存放对其质量的影响.综合四个方面的外观性状影响因素提出了评价鸡蛋质量的方法,为消费者选购鸡蛋提供参考依据.
