微粉碎对香蕉皮可溶性膳食纤维功能特性的影响

         

摘要

【目的】筛选具有高吸附功效的合适粒径的香蕉皮可溶性膳食纤维冻干微粉,为其在保健品上的高值利用提供参考。【方法】以香蕉皮为原料,通过酸处理和真空冷冻干燥,再经微粉碎得到不同粒径的可溶性膳食纤维,并研究了微粉碎对香蕉皮可溶性膳食纤维持油力、阳离子交换能力、NO2-吸附能力、胆固醇吸附能力和重金属 Pb2+、Cd2+吸附能力的影响。【结果】在模拟人体胃、肠环境下,香蕉皮可溶性膳食纤维对 NO2-、胆固醇和重金属 Pb2+、Cd2+均有明显吸附效果,随着粉碎程度的增加,可溶性膳食纤维的持油力有所升高,对阳离子交换能力和 NO2-的吸附能力下降,而对胆固醇和重金属 Pb2+、Cd2+的吸附能力呈先增加后降低趋势。【结论】当微粉粒度为80目时,香蕉皮可溶性膳食纤维的持油力、胆固醇、重金属 Pb2+、Cd2+的吸附效果达到最佳,是比较合适的微粉粒径选择。%Objective]The aim of the study was to screen the soluble dietary fiber of banana peel with suitable particle size and high adsorption efficiency,and to provide reference for the health care products.[Method]Different particle sizes of soluble dietary fiber from banana peel were ob-tained by acid treatment,vacuum freeze drying and fine grinding.The effects of fine grinding of soluble dietary fiber on the function properties including oil holding capacity,cationic exchange capacity,and the adsorptivities of NO2 - ,cholesterol,Pb2 + and Cd2 + were explored.[Results]Banana peel soluble dietary fiber had strong adsorption capacities for NO2 - ,cholesterol,Pb2 + and Cd2 + in the imitative gastroenteric environment.With the increasing degree of fine grinding,oil holding capacity increased,while cationic exchange capacity and NO2 - adsorptivity decreased. However,the adsorption capacity of cholesterol,Pb2 + and Cd2 + increased firstly and then de-creased subsequently.[Conclusion]Banana peel soluble dietary fiber in 80 mesh was the optimum grinding degree that exhibited the best functioning properties.
