本文旨在研究不同中药复方对山羊肉中氨基酸及脂肪酸含量的影响.试验选用体况良好、体重(24.09±1.25)kg的4月龄崂山奶山羊公羊20只,随机分为5组,即对照组和4个试验组,每组4只.对照组饲喂基础日粮,4个试验组在日粮中分别添加1.2％的复方紫锥菊提取物(试验Ⅰ组)、四君子散(试验Ⅱ组)、强壮散(试验Ⅲ组)和复方钩吻提取物(试验Ⅳ组).结果表明:复方紫锥菊提取物和四君子散可显著提高羊肉中甘氨酸的含量,分别比对照组提高了13.13％和8.64％,提高肾周脂肪中油酸的含量,分别比对照组提高了3.72％和3.64％,也可降低背最长肌中硬脂酸的含量,且复方紫锥菊提取物组的降幅最大,分别比对照组、四君子散和强壮散组降低了9.74％、7.93％和10.39％.综上所述,复方紫锥菊提取物在提高羔羊肉品质方面效果最明显.%Effects of different herbal compound on the amino acid and fatty acid content of dairy goat mutton were studied.Twenty four-month-old Laoshan dairy goats rams in good health,weighted with 24.09±1.25kg were chosen and divided into 5 groups randomly,4 dairy goats in every group including one control group and four test groups as well.The dairy goats in group one were fed a basal diet,and the dairy goats in test group Ⅰ,Ⅱ,Ⅲ and Ⅳwere fed the basal diets supplemented by 1.2％ of the basal diet separately with Echinacea extract compound,four gentlemen powder,strong powder,Gelsmium elegans extract compound,respectively.The results showed that both Echinacea extract compound and four gentlemen powder could significantly increase the glycine content of lambs,higher than that of the control group by 13.13 ％ and 8.64％,respectively,increase the oleic acid content of perirenal fat in lambs,higher than that of the control group by 3.72 ％ and 3.64 ％,respectively,decrease the stearic acid content of longissimus dorsi muscle,in which Echinacea extract compound was significant,lower than that of the control group,four gentlemen powder and strong powder by 9.74％,7.93％ and 10.39％,respectively.In conclusion,Echinacea extract compound have a significant effect on lamb quality.
