The bacteriostasis of recombinant L.casei metabolites was studied.The oxford plate assay system was used to detect the bacteriostasis of the metabolites on E.coli and S.aureus under treatment of different pH values,heating,and pepsin.The results showed that the metabolites were active in pH 2.0~4.0,heat stable and constant with pepsin.Conclusion: the metabolites of recombinant L.casei had bacteriostasis effection on some pathogenic bacteria.%试验对重组干酪乳杆菌代谢产物的抑菌效果进行研究。利用牛津杯法研究了干酪乳杆菌代谢产物(不同pH值、热和胃蛋白酶处理)对大肠杆菌、金黄色葡萄球菌抑制效果。结果表明乳杆菌的代谢产物对大肠杆菌、金黄色葡萄球菌均有明显抑制作用,在pH值2.0~4.0时有抑菌活性,并且代谢产物对热稳定,其活性不被蛋白酶破坏。结论:重组干酪乳杆菌能产生对肠道致病菌具有抑制作用的代谢产物。
