猪肉、猪肝和猪肾中重金属含量及其健康风险评估综述

摘要

In order to understand the heavy metal pollution in pork, pork liver and kidney data of lead, cadmium and mercury is collected. Health risks from pork, liver and kidney are assessed based on the Target Hazard Quotient (THQ). The results show that lead and cadmium content in pork, liver and kidney in some areas is above the standard. THQ of cadmium in pork is above 1 in Shenzhen. People in Shenzhen have a significant health risk of cadmium exposure.
