SS,SPS,SSS,GBSS,AGPP,SBE,DBE are key regulatory enzymes for grain starch, which play important roles in constitute and content of starch and affect yield and quality of wheat.In this paper the function,types,pustulation period variation and effects of adversity on enzyme activity were reviewed,the research direction was proposed as well.%蔗糖合成酶、磷酸蔗糖合成酶、可溶性淀粉合成酶、束缚态淀粉合成酶、腺苷二磷酸葡萄糖焦磷酸化酶、淀粉分支酶、脱分支酶是小麦淀粉合成的关键酶,决定淀粉的组成和含量,影响了小麦的产量和品质。综述了小麦淀粉合成酶的功能、类型,灌浆期变化,逆境对其酶活影响等的相关研究,并提出了未来小麦的研究方向。
