常见食源性植物毒素的中毒检测方法概述

作为丰富餐桌的天然野菜受到百姓的欢迎,但天然植物中存在的毒素可能会由于人们认知不当,或对食材处理操作不当引起人们发生中毒甚至死亡,严重危害人体的健康.通过对几种常见植物毒素的性状、中毒机理和毒性,以及植物毒素的检测分析方法进行了概述,以期加强人们对食源性植物中毒素成分的认知,同时提高实验室对中毒事件的快速检测和分析能力,以便未来可以更好地利用丰富的天然食材.%Natural wild herbs are welcome by people,but naturally toxins present in plants may cause people sickness and poisoning or even death due to improper cognition,or false food processing operations.Four common plant toxins,traits,toxic mechanism and toxicity,and the detected methods were listed.Strengthening people in composition on food plant poisoning were described,to improve the laboratory analysis ability for those toxicant,make better use of the abundant natural ingredient in future.
