The bioactive peptides by protease hydrolysis and its functional property were studied in the water-ethanol solution using zein as material. The better conditions were determined as follow:the water-ethanol as substrate solution (volume ratio1:9),the amount of pepsin:32000IU/g,temperature 60℃,hydrolysis time 2h,substrate concentration31.6mg/mL,pH1.8. Antiox idant ability of corn peptides are evaluated by DPPH method.The result indicated that corn peptides have free radical scaveng ing activity.%以玉米醇溶蛋白为原料,研究了在水-乙醇二元体系中通过蛋白酶解法制备玉米活性肽的较佳技术条件,并探讨了玉米活性肽的功能特性。确定了玉米蛋白酶解的较佳溶液为水-乙醇(体积比1:9)二元体系;胃蛋白酶用量为:加酶量32000 IU/g蛋白,酶解温度60℃,时间2 h,pH值1.8,底物浓度31.6 mg/mL。利用1,1-二苯基苦基苯肼(DPPH)法研究了玉米活性肽的抗氧化能力,结果表明玉米活性肽具有自由基清除能力,但与水解度不成正相关关系。
