金针菇营养保健功能及食品加工研究现状

摘要

The nutrient components, the active ingredients and health function of Flammulina velutipes were summarized. The research of Flammulina velutipes food processing was reviewed. The problems of advanced processing were discussed, then some proposals were raised.%　　对金针菇营养成分、活性成分及保健功能进行了总结，对金针菇食品加工研究现状进行了综述，探讨了金针菇深加工过程中存在的问题，并提出了建议。
