玉米高F值寡肽的制备研究

         

摘要

Corn gluten meal (CGM), as the raw material, which hydrolyzed with enzyme to prepare corn high F-value oligo-peptide. The optimum hydrolysis conditions of papain were temperature of 55℃,reaction time of 3.5 hours, papain/substrate ratio of 4.0 g/100 g, hydrolysis pH of 7.0, alkali consumption 2.72 mL. It indicated that the corn peptide molecular weight ranged between 200 to 1 000 Da, and its Fischer ratio was more than 20, by high performance liquid chromatography (HPLC) and amino acid composition analysis.%以玉米蛋白粉为原料采用酶法水解制备玉米高F值寡肽。研究表明,木瓜蛋白酶的最佳水解条件:温度为55℃,时间3.5 h,酶添加量为4.0 g/100 g,pH7.0,此条件下消耗的NaOH溶液的体积为2.72 mL。通过高效液相色谱和氨基酸成份分析,所得寡肽的分子质量主要分布区域为200 Da~1000 Da,所制取的玉米肽F值>20。
