蛋白酶在酶类领域具有重要地位,广泛应用于食品工业中.综述了蛋白酶在肉类食品、烘烤食品、饮品、乳制品以及调味品中的具体应用情况和使用时的注意事项,以期对食品生产加工有一定的参考作用.%Protease has an important position in the field of enzymes, widely used in the food industry.This paper reviewedthe specific application of protease in meat products,baked goods, beverages, dairy products and condiments and the precautions for use,with a view to reference to food production and processing.
