基于主成分分析法建立洞庭碧螺春质量评价模型

         

摘要

Dongting Biluochun tea with five different levels came from 6 different manufacturers of the East Dongting mountain,were used as material to establish quality evaluation model through detecting significant nu-tritional ingredients followed by principal component analysis.The significant indexes of Biluochun tea from the East Dongting mountain,such as water content,dry matter content,tea polyphenol,catechin,caffeine,solu-ble protein and free amino acids,and difference significance were analyzed.Then quality evaluation model of Dongting Biluochun tea was established using principal component analysis and cluster analysis.The results showed that there were significant differences between the Dongting Biluochun premium tea and non premium tea based the indexes which were water content,dry matter content,tea polyphenol and caffeine.And quality evaluation model was:F=0.365 81F1+0.215 03F2+0.162 79F3+0.116 16F4.The model could be used to identify Dongting Biluochun premium tea and non premium tea.The result of cluster analysis in the study was in good a-greement with principal component analysis.%以洞庭东山6个不同厂家的碧螺春茶为原料,通过测定含水量、干物质、茶多酚、儿茶素、咖啡碱、可溶性蛋白质、游离氨基酸等指标的含量,分析其差异显著性,并利用主成分分析法构建碧螺春茶的质量评价模型,并对碧螺春茶按照得分进行排序;利用聚类分析法对碧螺春茶进行质量相关性分析.结果表明:含水量、干物质、茶多酚、咖啡碱等指标可以表明碧螺春特级茶和非特级茶之间有显著性差异;构建质量评价模型为:F=0.36581F1+0.21503F2+0.16279F3+0.11616F4,利用此模型能初步鉴别碧螺春特级茶和非特级茶;聚类分析法与主成分分析法的结果具有较好的一致性.
