市售雪菊酒品质评价

         

摘要

The quality of commercially available Coreopsis tinctoria Nutt. wine was evaluated by the combination of electronic tongue,electronic nose and Gas Chromatograph Mass Spectrometer(GC-MS).The results showed that the sweetness of Coreopsis tinctoria Nutt.wine was higher than that of liquor,but its acidity was lower.There were significant differences in asthenity and salty between the two types of wine(P<0.001), but no significant difference in abundance.The results of GC-MS and electronic nose showed that there was no significant difference in the types of esters between Coreopsis tinctoria Nutt. wine and liquor. The species of alcohols in the Coreopsis tinctoria Nutt.wine was much higher than that of the liquor,but the acid was less.On the whole,the difference was not significant in the volatile flavor between them.In terms of color,the two types of wine were significantly different and can be distinguished by the naked eye. Multivariate analysis of variance showed significant differences between Coreopsis tinctoria Nutt. wine and liquor when they were grouped by sample type(P=0.045).%采用电子舌、电子鼻和气相色谱-质谱联用法(Gas Chromatograph Mass Spectrometer,GC-MS)相结合的方法对市售雪菊酒产品品质进行评价,研究表明,雪菊酒较白酒的甜味重而酸度要比白酒的淡,两类酒在涩味和咸味上差异极显著(P<0.001)而在丰度上无明显差异.经GC-MS与电子鼻检测发现雪菊酒与白酒在酯类物质种类上无明显差异,但雪菊酒中醇类物质种类要比白酒的多,而酸类物质较白酒少,总体上二者在挥发性风味物质上差异不显著.在色度方面两类酒显著不同,经肉眼即可区分出来.当以样品种类为分组依据时,多元方差分析检验雪菊酒与白酒差异显著(P=0.045).
