The reactions catalyzed by lipase in non-aqueous media are the rather fundamental and applied fields in biotechnology research, which have been successfully applied to biosynthesis of peptide, polymer and drug, stereoisomer split and vitamin modification. Lipase in the organic phase can be used to catalyze the reac- tions as follows., esters synthesis, transesterification, peptide synthesis, ester polymerization and acylation. This paper introduces the catalytic mechanism and important factors influencing functions of lipase in non-aqueous media. After which, the research progress in the enzymatic synthesis of several vitamin esters in non-aqueous media was reviewed.%脂肪酶在非水介质中催化是目前生物技术中一个颇具基础性和应用性的研究领域。非水介质中的酶催化反应已经被成功应用到了多肽合成、聚合物合成、药物合成、立体异构体拆分及维生素改性等。介绍了脂肪酶在非水介质中的催化机理及其影响催化活性的重要因素,概述了近年来非水介质中脂肪酶催化合成几种维生素酯的研究进展。
