Monosodium glutamate (MSG),a common condiment,is a kind of white granular crystal. There have been reports about magnesium sulfate mixed into monosodium glutamate in recent years. Magnesium sulfate is extremely similar to MSG as it's difficult to distinguish by naked eyes.Adultera-ted MSG has been wasted because of destruction mostly,so it's important to find a way that could not only removing magnesium sulfate but also guaranteeing the quality of MSG.In this paper,magnesium sulfate is removed from MSG through filtering with 40-mesh sieve by using of its character that mag-nesium sulfate could lose crystal water while heated and turn to powder.The results show that mag-nesium sulfate content in MSG is less than 0.05%.The content of sodium glutamate is more than 99%,which is in line with national standards.%味精是常用调味品,白色颗粒状晶体。近年来,不断有硫酸镁掺入味精中的报道。硫酸镁与味精极其相似,肉眼很难分辨掺硫酸镁的味精,多被销毁,为厉行节约、反对浪费,寻找一种既对味精的质量没有影响,又能去除硫酸镁的方法,利用晶体硫酸镁受热失去结晶水变成硫酸镁粉末后,再用40目标准筛过滤,去除硫酸镁粉末,结果表明:味精中硫酸盐含量小于0.05%,味精中谷氨酸钠含量达到99%以上,符合国家标准。
