自选梨酒酿造用酵母YJ-60培养条件优化

         

摘要

以培养液OD直为评价指标,通过单因素和正交试验对自选梨酒酿造专用酵母Saccharomyces sp.YJ-60的培养条件进行研究.结果表明,控制培养基中加糖量为3.6%、初始pH值为5.0、培养温度30℃、摇床转速220r/min时,菌株YJ-60代谢旺盛、性状良好,培养16h其OD值达到2.033,比优化前提高了13.4%.%In order to optimize the culture conditions of Saccharomyces sp. YJ-60 for pear wine production, single factor experiments and orthogonal experiments were carried out using optical density(OD) value of culture medium as index. The results showed that the optimal culture conditions of Saccharomyces sp. YJ-60 were as follows: initial glucose concentration 3.6%, initial pH value 5.0, culture temperature 30% and rotation speed 220r/min. Under these conditions, the OD value reached 2.033 after 16h cultivation, which was increased by 13.4% compared to that before optimization.
