植物甾醇酯制备方法研究进展

         

摘要

植物甾醇酯作为一种能够改善植物甾醇油溶性、降低胆固醇、降血脂和预防动脉硬化的新型功能性食品添加剂,近年来在国际食品行业中得到广泛应用和关注。该文对植物甾醇酯制备方法进行归纳总结,分析和对比了各种制备方法优缺点,为高催化效率、易分离、无残留、低成本的催化体系研究及高效、绿色植物甾醇酯合成工艺研究提供参考。%Phytosterol esters are kinds of novel functional food additives with improving oil-solublity, lowering serum cholesterol and preventing arteriosclerosis. In recent years,phytosterol esters have been widely used and concerned in the international food industry. We summarize various preparation methods of phytosterol esters. The main synthesis of phytosterol esters are biological and chemical catalytic synthesis. The principle,technology and application characteristic of these methods and the advantages and disadvantages of the methods are discussed in order to offering consults for the synthesis and application research of phytosterol esters.
