茶多酚在食品工业中的应用研究进展

摘要

Tea polyphenols are natural and efficient food additives.This articleintroduced the applicationof tea polyphenolsin the fieldof foodindustry,whichincludedoils and fats,meat and aquatic products,fruit and vegetables,functional food,pastries andcandies,eggs and soon.Action mechanism and problemsin the application were alsoclarified,respectively. It provided a basis for deep researchof tea polyphenols.%茶多酚是一种天然、高效的食品添加剂。该文综述了茶多酚在食品工业中的应用，包括油脂、肉制品和水产品、水果和蔬菜、功能性食品、糕点和糖果、蛋类等，并分别阐明了茶多酚的作用机理及应用中存在的问题。为茶多酚的进一步研究提供依据。
