Zein film with various percentage PEG‐400 (polyethylene glycol) was prepared ,and the stability of the films stored in different temperature and RH( relative humidity ) was researched .The results showed that EB(elongation at break) of the films contained more PEG‐400 changed obviously during storage .At relatively high temperature ,TS(tensile strength) of the films changed only a little ,and EB changed markedly .The EB and TS change extent increased along with the increase of RH .At low temperature and RH ,the stability of the film was better .%以玉米醇溶蛋白粉为原料,采用不同添加量的聚乙二醇‐400制备蛋白膜,研究其在不同温度和湿度环境条件下的储藏稳定性。结果表明,聚乙二醇的含量越高,储藏过程中蛋白膜的断裂延伸率的变化越明显。储藏的环境温度越高,储藏过程中玉米醇溶蛋白膜的抗拉强度变化越小,断裂延伸率的变化越大;储藏环境相对湿度越高,玉米醇溶蛋白膜的断裂延伸率和抗拉强度的变化越大。因此,低温和低湿环境条件下,添加聚乙二醇‐400的玉米醇溶蛋白膜的稳定性相对较好。
