薄壳山核桃是一种富含营养物质的坚果。通过采用压榨法和临界CO2流体萃取法2种提取方法,对提取油脂后的薄壳山核桃饼粕理化性质进行了研究和比较,发现其中富含油脂、蛋白质、矿物质等营养物质,其中氨基酸种类齐全,不饱和脂肪酸含量高,是一种适宜的食品加工原料。%Pecan is a kind of nutrient -rich nut.We studied and compared the physicochemical properties of pecan cake pro -duced by extracting grease from pecan through using compression method and supercritical CO 2 fluid extraction method , and found that pecan cake contained rich nutrient substances (grease, protein, minerals and so on), complete amino acid kinds, and abun-dant unsaturated fatty acids .Thus, pecan cake is a kind of appropriate raw material for food processing .
