It was determined that the content of total phenolic compounds, flavonoids, and flavonols in the extracts obtained with acetone from aromatic and medicinal plants vary widely: 1.32-24.33% (phenolics), 0.00-2.50% (flavonoids by rutin), 0.00-3.40 (flavonoids by quercetin), and 0.00-2.37 (flavonols by rutin). St. John's wort was very rich in all determined groups of compounds, while in dill seeds these compounds constituted only 1.32%. Some AO were tested for their ability to scavenge free DPPH" radical and it was found that the extract obtained from strawberry leaves was the most effective, followed by St. John's wort, hawthorn fruits, sweet grass, and arnica. A correlation was observed between the content of phenolics and radical scavenging. It was further found that the addition of plant extracts retards rapeseed oil oxidation in terms of weight gain and consequently peroxide formation during storage at 80℃. Sage, sweet grass, summer savory, Johnny-Jump-Up, and marjoram AOs increased the induction period of oil oxidation more than 3 times.
