ENVIRONMENTAL ACTIVATED SLUDGE FIELD MONITORING OF A NEW FOOD INGREDIENT, THE FAT REPLACER OLESTRA

Olestra is a new, fat-free cooking oil developed by Procter & Gamble (P&G) that isrnsynthesized from sugar and naturally-occurring fatty acids derived from soybean orrncottonseed oils. Olestra has been approved by the U.S. Food and Drug Adminstrationrn(FDA) as a replacement for edible fat used in making savory snacks such as potatornchips, tortilla chips, and crackers. An environmental field monitoring study of severalrnactivated sludge wastewater treatment plants has been ongoing since 1997 at threernsites in the greater Indianapolis, Indiana area. Wastewater and sludge solids samplesrnwere extracted for FOG (fats, oils, and greases) and residues were analyzed usingrnHPLC analysis for olestra content.
