Angiotensin converting enzyme (ACE) inhibitory peptides have been frequently used in the treatment of hypertension and related diseases.To obtain a optimal protease with high ACE inhibitory activity and degree of hydrolysis (DH),and make a comparison the difference of ACE inhibitory activity in cow and goat milk.Four commercial proteases including Alkaline protease,Trypsin,Bromelain and Papin were used to produce ACE inhibitory peptides by hydrolyzed skimmed cow and goat milk under their optimal temperature and pH.The results found that the DH of Alkaline protease was much higher than the other proteases for both cow and goat milk with DH 63.52%and 77.1%,respectively.Similarly,alkaline protease had the maximum ACE inhibitory activity for both cow and goat milk with value was 74.32%and 63.52%,respectively.Thus,alkaline protease was the optimal protease.Besides,there was no clear relationship between the ACE inhibitory activity and DH for both goat and cow milk.
