The opinion of "The lifestyles of health and sustainability (LOHAS)" is to give the guidance of sustain our life with health and longevity.The foods are the core of LOHAS and the LOHAS types of menu classics are the most important influencing factors for the restaurant business. The process of research was given under the research group organized by the chair firstly. The questionnaire of field survey, consists of 7 survey items and 4 background items, was used to get response from the customers. 219 ( 70.19% ) effective questionnaires were collected from the consumers who consumed at the vegetarian restaurants in central Taiwan for their scene of consumptions. Samples were randomly selected instead of being purposefully chosen. The questionnaire contains four parts. A total of 2 items, 3 items, 2 items and four items belong to the factors of part one, sales strategies of part two, effects and background of part three, respectively. No scales items were given. The four backgrounds of part four were gender, educational background, age, and jobs. Based on the Chi-square independent test, we got the results that there are independent between two items of each cross table, except there were dependent between the sex and product difference of sales strategies, and between age and the price of salesrnstrategies and market of effects. The setting of a vegetarian restaurant should be based on the price, the place, and market orient in the future. A vegetarian restaurant can decide the important series from the seven items based on the three survey parts to set their menu classics. A vegetarian restaurant can choose certain kinds of food for their menu classics, and exhibit the food sorts at the special showcase for promoting business.
