Physical properties such as viscosity vary with temperature in a roughly exponentialrnmanner over the glass transition temperature (Tg) region. Hence, at some temperature below Tgrnthe molecular mobility will be essentially zero. At such a low temperature, reactive or unstablernmaterials can be safely stored in an amorphous matrix, and the absence of molecular mobilityrnwill prevent the interaction of the reactive components. It has been proposed that the KauzmannrnTemperature (TK) demarks such a point of zero mobility. (1) This paper details the use ofrnspecific heat capacity (Cp) data and a spreadsheet to calculate TK for amorphous sucrose.
