摘要

Results from the research will be transferred in novel multifunctional starter cultures and improved technologies for food safety and quality, having an impact on the consumer protection and on the trade opportunities by the compliance of the EU criteria and regulation for food safety. All data obtained during the entire project will be used for the construction of a network based on complementary competences between partners. Synergies between European countries and Andean regions will deal for the revalorization of indigenous resources represented by Andean traditional foods as well as the scientific experience of the involved groups will be applied as a multidisciplinary approach.
