摘要

The structural characteristics of starch and its physical and chemical properties are briefly reviewed based on renewable resource of natural polymer in this paper. Some advances in researches of plasticization, graft copolymerization, blend; composite and enzymatic methods of modified starch were introduced and discussed. It is very important to improve the degree of substitution of modified starch and reduce its production cost, as well as make it with favourable processing and usage properties. It is widely used as raw materials and auxiliaries for many industries e. g. food, textile, paper making and pharmaceutical industry due to it is renewable, degradable and low cost; a vast range of prospects in making use of modified starch has opened up.
