Lipase-catalysed restructuring of the tringycerides of palm olein

Rearrangement of the fatty acid the triglycerides of palm olein was enzymatically catalysed using celite-adsorbed Candida cylindracea lipase in water-saturated hexane. Changes in the triglyceride profile were determined using reverse-phase HPLC.
