Effect of O_2 and CO_2 on the Post-harvest Physiology and Storage qualify of Zizyphus jujuba cv. were studied. The result showed: In the whole storage period, The soluble phenol-ics, ethanol, malonialdehyde content and relative electrical conductivity tended to increase with the storage lasting; the ascorbic acid contents increased firstly, then decreased, the firmness and crisp rate tended to decline. Proper low O_2 and CO_2 concentrations were good at inhabiting the decrease of the ascorbic acid, keeping higher crisp rate, controlling the drop of the firmness and the increasing of soluble phenolics, ethanol content, malonialdehyde content and relative electrical conductivity. Of all the treated, 3%O_2 +0% CO_2 treatment is the optimal to fresh-keeping jujube. Given the CO_2 concentration, there were not obveously different between 3% and 5%O_2.
