In this thesis, in order to determine the optimal parameters and factors influence degree about the polysaccharide extraction from jasmine flower residue, taking temperature, time, ratio between jasmine flower and water as the factors and taking the polysaccharide extraction rate as an index, using the method of quadratic regression orthogonally rotational combinational design, a series of extraction experiments were fulfilled. The experimental results showed that the best extraction condition was temperature 90.18-94.50°C, time 65.4484.61 min and the ratio 1:31.82-1:41.30;the influence degree of the factors were temperature>time>ratio;and the high level temperature increased the extraction rate of the polysaccharide. Moreover, the mode built in the investigation can be used to calculate the extraction rate accurately.
