In a rural community in Northern Nicaragua lives a group of women who are bringing new meaning to the words solar empowerment. The Mujeres Solares de Totogalpa (Solar Women of Totogalpa) is a cooperative that serves as a model of economic, ecologic and social sustainability in rural Nicaragua. The Solar Women's cooperative recently opened a solar restaurant in their rural community. The electricity for the 1,850 square foot adobe building is run entirely on solar photovoltaic power. The cooking is done by solar cookers, a biogas cookstove using methane from the latrines, and a charcoal cookstove utilizing charcoal that they produce themselves out of cornstalk waste. The Solar Restaurant not only offers nutritious solar cooked food to the community and tourists, but also showcases sustainable technologies, produces income for the women, and has greatly empowered the women to take a vested interest in bettering their community and environment.
