The work described in this paper was carried out as part of a large project to investigate the partitioning of impurities in sugar crystals, i.e.the tendency for impurity inclusion in sugar crystals. The project encompassed the development of a model of inclusion behaviour, analytical method development, three distinct experimental operations, model validation and model predictions. This knowledge is being applied to factory processing to reduce the levels of specific impurities in sugar crystals. Non-sucrose impurities are adsorbed on the crystalline structure of sucrose and are co-precipitated with sucrose into the crystal lattice. In addition, some impurities are present in enclave molasses inclusions within the crystal.
