We investigated the gene expression profile of brewing yeasts in the course of beer fermentation using a DNA microarray. When yeast was subjected to low malt ratio wort, nitrogen was completely exhausted at the mid-stage of fermentation, and these yeast cells showed a unique gene expression profile. The manner of gene expression showed correlation with the fermentation profile and entered in effect to the composition of off-flavor substances, especially sulfur flavors. DNA microarray technology enabled us to obtain useful information on the physiological state of the yeast during fermentation, and could be applied to the practical management of the fermentation process for positive direction of beer quality.
