The soybean is one of the oldest crops cultivated by man. In China, where it forms an important source of food protein, its origin is lost in antiquity. From China the soybean has spread over a large portion of the world, being now extensively grown in the United States, South Amerlca, Europe and the Far East. Whereas the soybean has been largely grown and utilized as a food crop to manufacture traditional food products in the Orient, its principle uses today are for the production of oil and meal for animal feedstuffs. The composition of the soybean that is exceptionally rich in good quality functional protein has led to rapid development of numerous modern industrialized protein food ingredients for human consumption such as: full fat and defatted soy flours and/or textured soy flour, soy protein isolate and soy protein concentrate. Of these industrial food ingredients the largest article of trade produced is soy protein concentrate.
