Red clover and alfalfa had similar protein contents, but extensive proteolysis of ensiled alfalfa occurred during fermentation compared with red clover alone. The main reason of this difference was that red clover had a soluble polyphenol oxidase (PPO). When alfalfa was ensiled in combination with red clover, it was found that the red clover component resulted in reduced protein breakdown of the composite silage. This mechanism needs further investigation in order to improve the utilization of legumes.
