Physiological and biochemical responses of flat peach fruit (Prunus persica L. Batsch, cv. Yingger) in response to hexanal and salicylic acid (SA) treatment were studied during post harvest storage at 5 V. Both treatments did not change the soluble solids content (SSC) and titratable acidity (TA) of peach fruits compared with the control. Lowered respiration rate, reduced ethylene and superoxide radical production were observed in both treatments. Moreover, reduced lipoxygenase (LOX) activity and lipid peroxidation were noticeable in treated fruits during initial periods of storage. Besides, treatment with hexanal, a phospholipase D (PLD) inhibitor, decreased PLD activity in fruits, whereas PLD activity did not change after SA treatment. These results suggest that both hexanal and SA treatments help maintain the membrane integrity and delay the senescence process of peach fruits potentially through independent mechanisms. Postharvest treatment by SA or hexanal might be a useful way to maintain the quality of peach fruits during storage.
